Satisfying yet harmless homemade fudge (vegan + sugar free)

This fudge is incredibly satisfying! Seriously, after my first bite I couldn’t contain myself and the piece was gone before I knew it. It’s dangerously easy and quick to whip together, delicious and filling! 

The star of the recipe is peanut butter (any type of nut butter will do). I’m hesitant to call it a healthy treat due to the conflicting information I’ve read about nuts. From my understanding, nuts are protein loaded and a great source of healthy fats, vitamins, minerals and antioxidants. However, I’ve also read that our bodies are only equipped to deal with and benefit from small amounts. From an evolutionary perspective ( so way back) peeling nuts required a lot of energy in relation to the tiny reward. Our bodies haven’t adjusted or caught up with the substantially larger quantities we can get a hold of today. So the takeaway message would be: eat with moderation to reap the benefits. If you happen to go overboard, it could still be considered sort of healthy or minimally harmless if we compare it to traditional fudge.

Ingredients (all organic)

1,5 dl peanut butter (clean peanut butter, organic, no additives!)

2 tbsp cacao butter (melted)

2 tbsp maple syrup

1 ml vanilla extract

1/2 ml fine salt

tiny bit of vanilla powder (optional)

Mix all the ingredients together and then either pour into forms or baking paper and put in the freezer for about 40 minutes. Your welcome!
